so i found this recipe online and it works. So easy to do and with 245cals per serving (6g carbs) its easier to reach my daily 1100-1200cals per day requirement.
Melt 1 tbsp salted butter (olive oil might make this taste bland)
Whisk 1 egg + 1/4 tsp italian herb (or anything u fancy)
Put 1 tbsp coconut flour into a wide mug (almond flour has different recipe u can google it and follow it accordingly) + 1/2 tsp baking powder
Pour melted butter into mug and the whisked egg (compulsory to whisk before adding to dry ingredients) and mix the batter well
I microwaved mine at 1.2mins using medium high(90). But depends on microwave u can just follow the basic rule of using high for 90seconds and adjust from there.
Allow to cool before cutting in half and toast with little bit of butter on pan. Serve with eggs
Careful with the butter for toasting. Use food calorie counter to keep track no matter how many amount u use. (245cals is including 1.5tsp butter for toasting)
