So I have some recipes tried and tested by the whole family
I thought I would share them if you happen to try them let me know would love to hear feedback!
Prawn po boys (subs) serves 4
Ingredients: -
2cups finely shredded red cabbage
2tblsp dill pickle relish(I used cucumber relish)
2tblsp fat free mayonnaise
2tblsp fat free plain yoghurt
1/2 kilo of deveined raw prawns
4tsp canola oil divided (I used extra Virgin olive oil)
1tsp chilli powder (I used jar crushed chilli aldi brand)
1/2tsp paprika (I used sweet paprika)
1/4 tsp ground pepper
4 whole wheat hotdog buns
4 tomato slices halved or chopped
1/4 cup thinly sliced red onion
Method:-
Heat nonstick frying pan to high add a drizzle of oil, place onion ,cabbage and fry til soft..
Set aside in a bowl add relish,mayo and yoghurt.
Toss raw prawns with oil, chilli, paprika, and pepper
Place remaining oil in a small dish dip a pastry brush in oil and brush lightly the inside of each cut bun
Grill prawns under grill til just cooked
Grill buns til crispy (to your preference)
Divide cabbage mixture , prawns , tomato between buns
Creamy Garlic Pasta
Ingredients:-
6 ounces of whole wheat spaghetti
1/2 kilo raw deveined prawns
Bunch of asparagus
1 red capsicum
1 cup peas
3 cloves garlic
1&1/2 cup plain yoghurt
1/4 cup flat leaf parsley
3 tblsp lemon juice
1tblsp extra virgin olive oil
1/2 tsp ground pepper
1/4 cup toasted pine nuts (to toast them place in baking dish in 180 dg oven for 10min)
Method:-
Bring water to boil add spaghetti cook for 2 mins less than packet instructions
Add asparagus, capsicum, and peas cook for 2minutes add prawns cook until pasta is tender (don't drain just yet)
Grind garlic and salt til pasty whisk in yoghurt,parsley and lemon juice
Oil and pepper
Drain pasta mixture and add yoghurt/garlic mix and toss well serve sprinkled with nuts
